Saturday special

Saturday special.
Every Saturday is great because I get to spend it with my 2 favorite people.
We headed to the gym  and Clint lifted weights and I got 6 miles in 52 minutes in.
No errand running after because Clint got these on the smoker for supper




They were DELICIOUS!!!

I needed to make a "breakfast" bread and I searched the internet world for something I had all of the ingredients for and something that Clint and Ava would like.  I came across this recipe,

INGREDIENTS
1 1/4 cups apple cider(I used the same amount of apple juice)
2 tablespoons butter, cut into pieces
3 cups white bread flour
2 tablespoons light brown sugar
1 teaspoon salt
1 teaspoon cinnamon
2 1/4 teaspoon bread machine yeast

Directions.  
Put in the the ingredients according to instructions on your bread machine.
I put them in the way the ingredients are listed. 
(I don't have to put the yeast INSIDE the machine.  I have a little yeast dispenser at the top of the machine.)
I set the machine for BAKE SANDWICH.
This will make a 1 1/2lb loaf.  
(It smelled SO good baking!)
4 hours later, I got this...

No complaints here!!!

Pool, pizza, pizza casserole


TGIF!!
Yesterday after cleaning up the house and getting my run in, we had a play date with 2 of my best friends and their kiddos.  My friend, E, has a small pool and when it is 96 degrees out, any pool is a good one!!



Lunch time break with a treat for Ava....Pizza!!!

Pizza Casserole!

Supper was this, pizza casserole!
Ingredients:
1 bag of Egg Noodles(I used whole wheat rotini pasta)
1 extra large can of Ragu sauce {or any tamato sauce you prefer}
3 cups shredded mozzarella cheese {or more depending on how much you ♥ cheese!}(I used 1.5 cups)
1 1/2 lbs hamburger meat(I used 1lb of ground chicken)
1 package pepperonis

Directions:
Preheat oven to 350 degrees. 
Put small amount of sauce on 9x12 pan.
Put half of pasta on sauce.
Layer with half of the chicken.
Layer with half of the cheese.
Repeat.
Finish with pepperonis on top. 

*Clint said this was a recipe to keep and have every now and then.

Saturday's productivity

A few things I did yesterday...
3.5 mile run with this 4 month old!  


This is Pekka(pek ka).  He is named after a Nashville Predator Hockey goalie.  We lost our Jack Russell in an accident about 4 months ago.  We got Pekka shortly after.  He is a lab/pyranese/red tick hound mix.  He will probably get to be about 85-100lbs!  Yesterday was his longest run with me so far!  So proud of him!

We headed to the gym(last month on our contract) to lift some weights and I did 2.5 more miles on the treadmill.

Fantastic Cinnamon raisin bread.  (minus the raisins)
I have started making our bread.  It is so much more budget friendly and fun!  I have a bread machine and this is the recipe I used with my alterations.

INGREDIENTS:
Serves: 12Yield: 2 lb. loaf Units: US | Metric 
1 tablespoon oil 1 1/4 cups warm water, plus 1 tablespoon warm water 
1/4 cup honey 
1/4 cup maple-flavor syrup (can use sugarfree) 
1 teaspoon salt 
1 1/2 teaspoons cinnamon 
1 cup oatmeal 
3 cups bread flour, plus 2 tablespoons bread flour 
1/2-3/4 cup raisins(OMITTED
2 1/4 teaspoons active dry yeast 

DIRECTIONS:
1. In bread machine pan, place ingredients in order given, except raisins and yeast. 
2. Circle inside of pan with raisins. (OMITTED)
 3 Make a well in flour and pour in yeast. (I put the yeast in the yeast dispenser on my machine.)
4 Bake on white cycle. (I baked on BASIC SANDWICH setting)

Time for a change

HAPPY Saturday!
Ava woke up bright and early at 4am this morning!  Not on my to-do list!!

I want to tell you about work yesterday. Let me back up and let you know that Monday my boss, H(Chiropractor's wife) informed me that they would be letting my coworker go on Friday.  This has been a long time coming and the office is going in a different direction.  
So, the plan was for H to let her go at lunch time.  Well, about 45 minutes before, my coworker got a medical alert that her mom had fallen.  She booked out of the office faster that I could say, "what in the world".  She didn't inform my bosses at all.  
Needless, to say they didn't let her go at lunch.
She came back at 2pm after lunch like nothing had happened.  No explanation or phone call to my bosses letting them know if her mom was ok.  (Seems unprofessional to me) 
Doc had to ASK her how her mom was! 

The afternoon went on and we were finishing up for the night. D went back to tell Doc she would see him Monday.  He then went on to say, "well, actually...."
If I wouldn't have known this was coming, I would NOT have been able to tell by the way she reacted.  She grabbed her stuff like any other night and said bye.  That was it!

All week, I felt so uncomfortable around her because I knew it was coming.  I didn't treat her different, but my heart was heavy because I knew what her future looked like and she had NO IDEA!  Thankfully, her husband has a great job and they won't struggle financially, but still!  She was a really nice lady with a good Christian heart, but ironically she was the most passive aggressive pessimist I have ever met!

Moving on.  I finished my first little "upcycle" with a bare shelf and 2 picture frames I got from Goodwill and a yard sale. Here it is in all its glory.  (any ideas what to put on the right side??)

My project in the works is a bench for Ava's little black table.  That will be a birthday present!  I'll show that when I get done!

Today, we will head to the gym and then go out to eat with Pops(Clint's dad) and his fiance.

"its been a while"


OMG....it has been since February that I posted!  It is high time I remedy this!!

A little update.  I am now the Assistant office manager at a fabulous Chiropractic office 5 minutes from our NEW house!  We sold our house, found our new and moved in to it all in 2 weeks!!  It was a whirlwind two weeks, but we got it done!  Our new house was vacant, yay, so that is how we were able to move in before closing.  It is slowly but surely coming together and I am starting to be an avid "upcycler".



Since I only work at my job 3 days a week, the other days I am a SAHM.  This is my "job" I am greatful for!  Ava will be 2 on the 31st and she is the best kid and so much fun.  On Tuesdays and Thursdays we clean house, run errands, workout, and yard sale(Thursdays).

We were able to buy a treadmill to put in our bonus room and I am running at least 25 miles a week.  (Follow my log on Dailymile) I typically run just 4 days a week.  I lift weights 3 days in our garage.  My goal for the year is 1000 miles.  I'm ahead of schedule right now!!

Projects right now are painting a shelf (Goodwill)and some picture frames (yard sale) I got for great deals to put up in our kitchen.  I am also redoing a bench for Ava's birthday! I'll post pics when I am done!!
